“Tuscan” Chicken

This is one of our go-to recipes that I’ve not gotten around to posting for years – yes, plural, as often as we make it! It’s a stretch to call it “Tuscan,” but the flavors are meant to go in that direction. We got this one from Delish, and it still works well even with all of my substitutions! You could customize this in a many ways, and it’s great on it’s own, with some crusty bread, over pasta, you name it. Definitely a favorite of ours, and it’s very easy.

  • Olive oil
  • boneless, skinless chicken breasts – I like filets best for this, but if I don’t have them handy, I do brine the chicken first.
  • Kosher salt
  • Pepper
  • 1 tsp oregano
  • 3 Tbsp butter (I use SmartBalance or EarthBalance)
  • 3 cloves of garlic, minced – I absolutely up this to 5+
  • 1 1/2 cups cherry tomatoes, halved – ** as much as I love them, tomatoes and I don’t get along. I actually use a jar of Nomato sauce for this. If you aren’t familiar with it, it’s a really great option for people avoiding acid! You can also make it yourself!
  • I bag of baby spinach
  • 1/2 cup heavy cream – I use 1+ cup of Oatmilk. Make sure it’s Planet Oat’s Barista Blend, or something of a similar thickness. You absolutely will not notice.
  • Shredded parmesan

In a skillet over medium heat, heat oil. Add chicken and season with salt, pepper, and oregano. Cook until browned on both sides and an instant-read thermometer inserted into the thickest part of the breast reads 165°, 8 minutes per side. Do 3-4 minutes per side if it’s a filet. Remove from skillet and set aside. 

In the same skillet over medium heat, melt butter. Stir in garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt. 

Stir in heavy cream and parmesan and bring mixture to a simmer. Reduce heat to low and simmer until sauce is slightly reduced, about 3 minutes. Return chicken to skillet and cook until heated through, 5 to 7 minutes.
