This was quite good and open to many interpretations! My friend Stephanie suggested this after I asked for recipe ideas. I have recently been put on a low FODMAP diet, which is a rude awakening for sure (but hard to argue as it is making a difference). It’s easy to become discouraged, but simple ideas like this work well! I’m planning to share some recipes (or just ways to prepare food) that work for us and keep me from eating nothing but eggs and cucumbers! 🙂

Stuffed Peppers Round 2
I have a pretty reliable stuffed peppers recipe we like a lot, but I thought it was time to try something new…we really liked this one! It was based on a recipe from Damn Delicious. I used ground turkey instead of beef, and quinoa instead of rice, both substations I prefer regardless. We did this in the slow cooker and it came out really well!
Quick “Cassoulet”
We had a couple of cans of white beans, and a kielbasa that needed a job, and it’s cold here on the farm. While we have more time than we used to on a weekday (horses live at home rather than me driving…amazing the difference!), we still appreciate a quick dinner. This was fun, tasty, open to whatever sausage you have on hand, etc. It is from Epicurious, and came up when I googled, “quick cassoulet!” I added a package of spinach for filling (and because it needed to be used up).
Smothered Drumsticks
This was a great older Food and Wine recipe when you’re looking for nice comfort food. It would do just as well with pork chops, but we loved the drumsticks. We had this with brown basmati rice and Brussels sprouts.
Salisbury Steak Meatballs
Another pressure cooker adventure! Also another Skinnytaste recipe. We had this with cauliflower mash. Definitely one worth repeating.
Honey Teriyaki Drumsticks
So we got a pressure cooker. It was kind of intimidating at first, but lucky for us, our friend Missy had started this craze, so I jumped on her bandwagon and learned how to use the pressure cooker from her (seeing a trend here? Missy taught me how to cook!). We love both this recipe and the pressure cooker! Easy, quick, great options – definitely a good purchase. This was a winner of a recipe from Skinny Taste, though I should have thickened the sauce before serving. We had this with some sautéed zucchini. Awesome!
Poached Fish in Spicy Tomato Broth
So this is pretty much awesome. It’s a Cooking Light recipe that was my first time cooking fish years and years ago, and I’m just now getting around to posting it and remembering how great it was. Great weeknight meal, fast, tasty, and any veggies go well with it. We had this with roasted green beans and mashed cauliflower. This would be great with any firm white fish.
Breaded Pork Chop Cutlets
I am generally not a fan of breaded anything, but these were awesome and very simple. I brined the pork chops for a couple of hours before cooking, which really does make all the difference IMO, no matter what the cooking method (I’ve started doing it with chicken breast too, and get great results). This is from this month’s Cooking Light, and we had it with mashed potatoes and brussels sprouts – we both loved it.
Slow Cooker Beef and Broccoli
Always on the lookout for new crockpot recipes to try, and this one was very good. Easy and a good riff on the takeout classic. I might add a hair more garlic and some Sriracha next time, but just being picky. You could serve this over rice or noodles, but we actually just had it on its own and enjoyed it that way.
Queso Dip
So I feel like I may be stretching it a bit if I call this a recipe. But it is like crack dip and Velveeta for the win, of course! This was great for a crowd, and you can really adapt it any way you like. I made this for a fun girls’ night at the barn and we enjoyed it!
