I was never a huge pancake fan until I started thinking about how good pancakes would be if they had some cinnamon in them…now this is one of my favorite breakfasts. Not something I make often, but always good when I do, and it’s really great for a cold fall or winter morning.
- 1 1⁄2 cups Flour
- 3 1⁄2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 tablespoon Granulated Sugar
- 1 teaspoon Cinnamon
- 1⁄4 teaspoon Ground Nutmeg
- 1 1⁄4 cups Milk
- 1 Egg
- 3 tablespoons Butter, melted
- 1⁄2 teaspoon Vanilla Extract
In a large bowl, sift together the flour, baking powder, salt, sugar, cinnamon and nutmeg. Make a well in the center and pour in the milk, egg, melted butter and vanilla; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/3 cup for each pancake. Brown on both sides and serve hot.
