Great side salad that you can adjust however you like. I’ve used walnuts, hazelnuts, cranberries, goat cheese, feta, etc. I do prefer that the oil used in the dressing go with the nuts, but you could play with that as well.
- 1 bag spinach
- Handful of feta or goat cheese
- Handful chopped walnuts
- Dried cranberries
- 1 tablespoon red wine vinegar
- 2 teaspoons dijon mustard
- 1 tablespoon finely chopped shallots
- 3 tablespoons Walnut oil
- salt and pepper
Combine vinegar, mustard, shallots, and salt and pepper. Slowly add oil until well combined and creamy. Toss dressing with spinach, cheese, and nuts.
