I’m a sucker for meatloaf, and Shawn’s super healthy turkey version is awesome and filling. It makes a ton, so plenty leftover for meatloaf sandwiches for lunch. Which I like even more than meatloaf by itself. This is very low cal and WW Compatible, and Shawn served it with roasted brussel sprouts and shirataki “butter” noodles. Definitely a favorite!
- 2lbs of ground turkey
- 1.5 bags of fresh spinach, stemmed
- 1-2 jarred roasted red peppers, chopped
- 2 eggs
- 1/2 an onion, diced finely
- 3/4 cup of plain oats
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground white pepper
- 1 teaspoon dried basil
Preheat oven to 350.
Boil or steam spinach until cooked down. Add spinach and all other ingredients to a large bowl and mix thoroughly. Divide between two ungreased loaf pans.
Back for approximately 50 minutes or until done. Should come to 12-16 servings, depending on how thick you like your slices.
WW – 4 points a serving, 120 calories a serving (we had 16 servings in ours).
