Deviled eggs and egg salad sandwiches are two of my favorites…makes sense to combine them! I did this in lettuce wraps instead of bread, and it was very filling. Great for a quick low carb meal, and it would be perfect for lunch. You can make this to size, and throw in whatever you like in your egg salad.
- 3-4, hard-boiled eggs, roughly chopped
- 1 clove garlic, crushed
- pickle relish to taste, or 1 pickle roughly chopped
- About 1 teaspoon Worcestershire sauce
- 1 tablespoon dijon mustard
- splash of Srirach
- slash of rice vinegar
- Salt and pepper
- 1 teaspoon paprika
- 3-4 tablespoons low fat mayo
- lettuce leaves
Mix everything together and spoon onto lettuce leaves or bread. Season to taste – it’s a very flexible recipe. 🙂
