Deviled Egg Salad

Deviled eggs and egg salad sandwiches are two of my favorites…makes sense to combine them!  I did this in lettuce wraps instead of bread, and it was very filling.  Great for a quick low carb meal, and it would be perfect for lunch.  You can make this to size, and throw in whatever you like in your egg salad.

  • 3-4, hard-boiled eggs, roughly chopped
  • 1 clove garlic, crushed
  • pickle relish to taste, or 1 pickle roughly chopped
  • About 1 teaspoon Worcestershire sauce
  • 1 tablespoon dijon mustard
  • splash of Srirach
  • slash of rice vinegar
  • Salt and pepper
  • 1 teaspoon paprika
  • 3-4 tablespoons low fat mayo
  • lettuce leaves

Mix everything together and spoon onto lettuce leaves or bread.  Season to taste – it’s a very flexible recipe. 🙂
