I love dirty rice, but sometimes I already have a meat-heavy entree and don’t want *more* meat in the rice. I found this recipe for vegetarian dirty rice a while back, and it was a great accompaniment to our Hoppin’ John for New Year’s Day dinner. I cut back a lot on oil and did not add butter as the original stated, but this is still not a super WW-friendly recipe. Worth saving up a few points for it, though! Recipe below is printed with my changes in fats.
- 2 tsp Olive Oil
- 1/2 an onion, diced
- 2 garlic cloves, minced
- 1 tsp. dry basil
- 1 tsp dry oregano
- 1 tsp. dark chili powder
- 1 tsp. paparika
- 1/2 tsp. crushed red pepper
- 2 c. Jasmin rice or any long grain rice
- 2 c. Vegetable stock
- 1 c. cold water
- Salt and pepper to taste
Heat a 2 qt. sauce pan to high, place olive oil in pan. Saute onion, garlic until carmalized. Add basil, oregano, chili powder, paparika, red pepper and rice. Saute rice for three minutes, stirring ocassionally. Add broth and water, stir. Bring to a boil for five minutes. Reduce heat to low and simmer for 20- 25 minutes or until liquid has evaporated.
