Asian Pork Brine

Another in the (delicious) quest for more excellent pork chop brines – I think this is now up there with my other favorite’s, Jon’s Cider chops and beer brined chops. Awesome on the grill! I adapted this from Rasa Malaysia.

  • 4 thick pork chops (bone-in is my favorite, but you could do either one)
  • 1/4 cup mirin
  • 1/2 cup soy sauce (I used regular sodium for the brining purposes)
  • 1-2 tablespoons chopped ginger
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon sesame oil
  • 1 1/2 cup cold water

Mix all the ingredients for the brine in a container or pot, just big enough for the pork chops. Marinade the pork chops in the Brine for at least 8 hours or overnight.  Grill either outdoors or on a grill pan, about 4-5 minutes a side.
