A typical six (or seven, if you add meat) layer dip. The only thing I really did differently was to heat up and season the refried beans so they were a little less…canned. 🙂 And I made the guacamole from scratch. One of my favorites! We had this at our New Years Eve party.
- 1 can Refried Beans
- Hot Sauce, To Taste
- Ground Cumin, to taste
- 1 bag Grated Sharp Cheddar Cheese
- 1 cup Sour Cream
- 1 cup Guacamole (I just made a whole batch, probably closer to 2 cups)
- 1 bagMonterey Jack Cheese
- 1 can Black Olives
- 1 cup Pico De Gallo
If you want to add some seasoning to the beans, empty the can into a small saucepan and heat over medium with some ground cumin and hot sauce of choice. It will definitely make it a bit more flavorful.
Spread the beans on the bottom of a glass bowl or high-sided dish. Over this sprinkle the sharp cheddar. Next, spread sour cream into a single layer, being careful not to disturb the cheese underneath.
The next layer is the guacamole. Spread it over the sour cream. Follow this with a layer of Monterey Jack Cheese and a nice sprinkling of chopped black olives. Lastly place the pico.
