So I really love anything wrapped in biscuit or crescent dough as an appetizer. This was a simple one (they all are, really…even when you make your own dough, which I did not this time) that was pretty tasty – next time I might add some spinach or some other green veggie for color. It’s not really even a recipe, but it is a great appetizer for a potluck…you could probably even use this for a brunch. It’s very flexible and very much to taste.

Kale and Red Pepper Frittata
First meal of Mostly Meatless March! We had a ton of eggs in the fridge and I was not feeling creative, so this is what happened. Inspired by a recipe on Chow, I made it with mostly egg whites to make it a little more low cal. Frittatas are one of my favorites for the versatility and clean out the fridge ability. It was quite good, and a nice start to being Vegetarian for a month (well, Pescetarian). The leftovers will make a great breakfast!
Egg McMuffins
Egg McMuffins are never going to be healthy, but they are about the most delicious breakfast ever. I found a recipe on Pinterest to lighten them up a little bit, and made a batch of them to freeze and take to work for a quick breakfast. They’re still not *great* for you, but at about 240 calories, they aren’t as awful as their fast food counterparts! This can be made with egg whites only if you’d rather, and any kind of cheese you like. American seems to melt best, though.
Oatmeal Blueberry Muffins
Very good, mostly healthy muffins that could be used with all kinds of fruits. I might give this another go with apples for fall.
Cinnamon Pancakes
I was never a huge pancake fan until I started thinking about how good pancakes would be if they had some cinnamon in them…now this is one of my favorite breakfasts. Not something I make often, but always good when I do, and it’s really great for a cold fall or winter morning.
