I’m becoming awfully fond of spaghetti squash…I don’t think we’ve encountered a recipe yet that we haven’t liked. This one was a winner for sure, and definitely satisfied my craving for some good old fashioned comfort food. I got this one from Skinnytaste, and spiced it up a bit…we loved it. The original recipe called for two squash, but that was too much for us. I did not cut the sauce for one squash, and it was still fine (but a smidge soupy). It was also ridiculously low calorie and made a ton, so there are plenty of leftovers for lunch.

Turkey Meatloaf
I’m a sucker for meatloaf, and Shawn’s super healthy turkey version is awesome and filling. It makes a ton, so plenty leftover for meatloaf sandwiches for lunch. Which I like even more than meatloaf by itself. This is very low cal and WW Compatible, and Shawn served it with roasted brussel sprouts and shirataki “butter” noodles. Definitely a favorite!
Sesame Udon Noodles
This is a great base recipe to use for a side dish. It is very versatile…add as many veggies as you want, or even add some chicken, pork, or tofu and turn it into a main dish. I just used what I had on hand. It also makes plenty, so can easily serve a crowd or make leftovers for lunch. We loved this one.
Beef Stew in Spicy Berbere Sauce
Hello November! Time for stews. 🙂 I love Ethiopian food, so this take on beef stew was fun to make and very tasty. My one complaint…way too much cayenne. I can handle heat, but I felt like this overshadowed the fantastic spice mix that helped to make up the sauce. That said, I made this with double the liquid and a smidgen of the cayenne compared to the original recipe, so maybe I am becoming a pepper wuss? Either way, we’ll definitely make this again, but I may use a different method to get a little heat. This came from Sunset magazine originally, and I served it with steamed rice and Moroccan carrots.
Char Siu Pork
Easy slow cooker recipe from Cooking Light with tons of flavor. I serve it with steamed rice and snow peas. It makes a lot, so there will be plenty of leftovers, which are even better the next day.
Whole Wheat Pizza Dough
Another great one from Mark Bittman’s How to Cook Everything that I use all the time. Homemade pizza is one of my favorites because it’s so easy to use it to clean out the fridge for toppings! And, it’s an easy treat to make relatively healthy.
Indonesian Grilled Swordfish
Great fish recipe from my friend Missy, which you can see at her site, Recipes by Missy. This would probably work pretty well with any sturdy fish steak. I served this with saffron rice and garlic green beans.
Spring Vegetable Pad Thai
This is great with rice noodles or shirataki noodles if you’re watching your calories.
