Arctic Char in Parsley and Garlic Sauce

We’re always looking for new ways to cook fish, and incorporate more of it in our meals.  We had some frozen Arctic Char hanging out that needed something to do.  I based this off a Food Network recipe for Garlic/Rosemary Arctic Char and went from there.  We served this with roasted asparagus and roasted herb potatoes.

arcticchar

  • 2-3 cloves garlic, crushed
  •  2 Arctic char fillets, fresh or frozen
  •  2 tablespoons olive oil
  •  1 lemon, juiced
  • Generous handful fresh parsley
  •  Salt and pepper

Preheat oven to 400 degrees.

Put the garlic, oil, lemon juice and parsley in a food processor and pulse until it forms a paste.

Place the fish fillets on a foil-lined, oiled baking sheet and generously season with salt and pepper.  Spread paste over each fillet and let marinate in fridge for 30 minutes.

Bake for 12-15 minutes until it flakes easily.  Broil for another minute or so to brown the tops of the fillets.
