Well, we’ve gone and done it and bought the farm of our dreams! The horses are right out back now, so it’s a lot easier to cook. Back to recipes. It seems fitting that the first one I’m adding to the site is a cake we served at our housewarming party. This is a 10+ year old Cooking Light recipe that always goes over well. It is great for Thanksgiving, or any other fall occasion. It also makes a great coffee cake!

Gotta love classic takeout curry, except it doesn’t necessarily work well with any kind of healthy diet plan. This worked well, though…easy to lighten, and we had it over cauliflower rice – it was very good! We would definitely repeat. You could use full-fat ingredients for this, if you were not looking to lighten it up.

Cute, easy, and disappeared fast! These were a fun Halloween dessert, but could also be great for Thanksgiving if you don’t want to make a whole pie. I would say don’t skip the butterscotch topping – really made it! Also really portable – great for pot lucks! I really liked these.

This was a cute pumpkin-shaped cake we had at this year’s Halloween party. A lot of steps, but not particularly difficult…just required two cakes baked in bundt pans. This would also be fun for Thanksgiving. This came from Shugary Sweets.

Another pressure cooker adventure! Also another Skinnytaste recipe. We had this with cauliflower mash. Definitely one worth repeating.

So we got a pressure cooker. It was kind of intimidating at first, but lucky for us, our friend Missy had started this craze, so I jumped on her bandwagon and learned how to use the pressure cooker from her (seeing a trend here? Missy taught me how to cook!). We love both this recipe and the pressure cooker! Easy, quick, great options – definitely a good purchase. This was a winner of a recipe from Skinny Taste, though I should have thickened the sauce before serving. We had this with some sautéed zucchini. Awesome!

My friend Talia and I went to the winery next to the barn, and of course had to try anything cheese related…which included a feta and red pepper dip. It was so good that I had to try to reproduce it! It took a few false starts, but it came out well. We served this for our Kentucky Derby party.

This was a pretty pasta salad for our Kentucky Derby party this year. Colorful and it had a lot of flavor. And of course pasta salad is always great for a crowd.

Although I am not much of a dessert person, I do try to have something on hand for our parties – and a pecan pie seemed just right for our Kentucky Derby party this year. Easy and it makes a pretty pie, too. This comes from Smitten Kitchen.
