Quick and easy homemade enchilada sauce that really improves over store bought. This is from Gimme Some Oven. I used this in enchilada soup, and it would also dress up any enchilada or even taco dish. This is a mild red sauce.

Peanut Butter Cup Cookies
Any time these appear on a cookie tray, I have to restrain myself from eating all of them. So I decided to go ahead and make them myself this year – definitely will be a regular addition in the cookie tins. This is from Joy of Baking.

Mint Chocolate Cookies
This may be one of my favorite cookies I’ve ever done – but I love all things mint. Definitely a popular one in this year’s cookie tins.

Another new cookie in this year’s holiday cookie extravaganza, this one was cute and went over well. A twist on peanut butter blossoms.

Holiday M&M Bars
One of the cookies for our yearly holiday cookie tins – as much as I am not a fan of chocolate, I really liked this one. Simple and makes a lot, too.

Pizza Cake
So this isn’t really a recipe, but it was a pretty cute dinner project that was a hit with the kids. You could use homemade pizza crust and sauce, and if it hadn’t been a weeknight dinner, I probably would have (and you could get really original with it that way, too). But it was still pretty good with store bought both. You will need a springform pan for this. This might also be a fun appetizer at a small party.

Cinnamon Streusel-Topped Pumpkin Pie
This is a Cooking Light recipe I’ve always used for pumpkin pie, because it’s really excellent. I make no changes to it except sometimes I will make the crust instead of buying crust. Really excellent pie, easy to make, and it’s pretty. 🙂
Chicken Pot Pie
Believe it or not, I have never actually had chicken pot pie. I recognize this is crazy. Luckily this has been remedied, and with a great recipe, too. This is from a Pioneer Woman recipe, and we loved it – leftovers were awesome! We made this for our Halloween party. You can use your pie crust recipe of choice, or store-bought, and it will make two pies.
Vegetable Pot Pie
This was a great vegetarian option for pot pie, and pretty easy too. It was not the healthiest thing ever made (cough, butter, cough), but as most Ina recipes go, it was also very good. And possibly a little over the top – note I did not use the Pernod (I did throw in a couple of star anise while it was simmering, though), and it turned out fine. 😉 Definite make again. Use with your favorite pastry crust, or store bought – both would be fine. This should make two pies.
Butternut-Squash-and-Sage Wontons
These things were like crack, seriously. Delicious, and although (very, very) time consuming, they were easy. They went like crazy at our Halloween party, and I will definitely be making them again for future parties. This recipe came from Food & Wine.
