Poached Fish in Spicy Tomato Broth

So this is pretty much awesome.  It’s a Cooking Light recipe that was my first time cooking fish years and years ago, and I’m just now getting around to posting it and remembering how great it was.  Great weeknight meal, fast, tasty, and any veggies go well with it.  We had this with roasted green beans and mashed cauliflower.  This would be great with any firm white fish.

Slow Cooker White Chicken Chili

This was a great, easy slow cooker recipe.  I love white chili, but haven’t really found a good one.  I used The Kitchn’s as a base, and as usual it was awesome.  I adjusted to taste, but I’m replicating the recipe as is so that you can change as you like.  Lots of leftovers and easy to freeze, so great for lunches or last minute meals later.  I like to top with cheese (obviously 😉 ).

Herb-Roasted Fish

We really do love fish, but we are also really bad about eating it regularly – particularly in winter. This is an Ina recipe I saw that looked great for a weeknight, and it was very easy.  Only downside was I left it in the oven for too long – lower end of the cooking time would have been perfect.  We had this with some asparagus and olive-feta quinoa.

Layer Dip

A typical six (or seven, if you add meat) layer dip.  The only thing I really did differently was to heat up and season the refried beans so they were a little less…canned. 🙂  And I made the guacamole from scratch.  One of my favorites!  We had this at our New Years Eve party.

Chex Mix

I remember our friend John making chex mix for parties in the past, so when I ran across this Pioneer Woman recipe, I wanted to give it a go.  It was very good, although I think better the next day.

Spinach and Artichoke Dip

Despite the fact that this is one of my favorite appetizers, I’ve never actually made it myself.  I found this Pioneer Woman recipe, and thought it would be perfect for our casual New Years Eve party – all appetizer-tastic.  It was excellent!

Roast Prime Rib

This was simple, came out perfectly, and is a definite do over.  With a thyme au jus, mashed potatoes, sprouts, and yorkshire pudding, it was an excellent Christmas dinner.  This is a Bobby Flay recipe.  The leftovers were awesome, too!

Yorkshire Pudding

Serious Eats did a “myths of Yorkshire pudding” article, and since we were going to do prime rib for Christmas, I felt like I obviously needed to make puddings to go with it.  Kenji did not let me down!  These were excellent.  Definitely the way to go from now on.  Because I was worried about having enough drippings, I actually used bacon fat and it worked out well.

Loaded Baked Potato Dip

My favorite thing to bring to parties is always the appetizer (probably because it’s my favorite thing to eat ;)).  This was a dip I hadn’t tried before that I made for our annual potluck.  It was really good, the only thing I’d say is that you would need to use thick chips to scoop up this dip!  Recipe from The Kitchn.

Enchilada Soup

This was a very flavorful, thick soup that was great on a cold day.  I used homemade enchilada sauce in the recipe, and lightened it with reduced fat cheese.  If you don’t have masa harina, you can substitute corn meal.  This, like the enchilada sauce, is also from Gimme Some Oven.
