Veggie Tortilla Roll-ups

This was the second mini sandwich we did for our wine tour with our friends, and it was another good one. I would definitely make it again for a get together or even for a lunch. Yummy vegetarian option. We did half on wheat and half on plain tortillas, and you could mix and match with any flavor.

Dilly Ham and Cheese Mini Sandwiches

We went on a wine tour for our friends’ surprise joint birthday party, and a picnic was included in said trip…clearly a good opportunity for mini sandwiches!  This was the first of three, quick and easy.  It would be easiest with cocktail bread, but we couldn’t find it and just used thin white bread and sliced off the crusts.  Very yummy!

Tibetan Beef and Sichuan Peppercorn Dumplings

My favorite cookbook is definitely, “Asian Dumplings,” by Andrea Nguyen.  I’ve yet to make anything I didn’t like, and some of them I really love.  They are great to share with friends!  We had a great time with our friends for a dumplings, ramen, and games night, and this was one of the meat dumplings I made.  I really enjoyed it…different than the pork dumplings I’m used to, and very interesting!  These are called Sha Momo, and I highly recommend you check them out, as well as the entire book!   Forgive the photo – it was post-steaming and it was…well, steamy. 😉

Hoisin Cocktail Meatballs

We recently hosted a dumplings, ramen, and games night and thought we wanted something…well, not wrapped in a dumpling wrapper or part of a noodle bowl.  Or really, I saw these, thought they looked awesome, and they were. 😉  We kept these warm in a slow cooker during the party, which worked well but I’d advise making sure you stir them now and then, which I forgot to do.  I would definitely make these again, especially for a party – I might double the recipe next time as well.  Leftovers were pretty good. 😉

Spinach, Feta, and Bacon Stuffed Mushrooms

Stuffed ‘shrooms are one of my favorite appetizers for parties, since they’re easy, portable, and tend to be a crowd-pleaser.  I’m actually not a huge mushroom fan myself, but I’ll eat anything with cheese and bacon. 😉  I got this one from Bon Appetite, and just added a bit more bacon and feta, and a bit less spinach (I thought 10 ounces would overwhelm everything else).  I think adding some roasted red peppers would be awesome both for color and taste, though, and would do that next time.

Sausage Pinwheel Rolls

So I really love anything wrapped in biscuit or crescent dough as an appetizer.  This was a simple one (they all are, really…even when you make your own dough, which I did not this time) that was pretty tasty – next time I might add some spinach or some other green veggie for color.  It’s not really even a recipe, but it is a great appetizer for a potluck…you could probably even use this for a brunch.  It’s very flexible and very much to taste.

Cucumber Yogurt Sauce

I want to call it tzatziki, but it’s kind of a cross between that and raita…which was exactly like the recipe from Chow said it would be.  Excellent with our Greek lamb burgers and salad, and will also make a yummy veggie dip later.  We were fans and will reuse.  You could definitely serve this as a dip rather than a topping/sauce. Good use of the zillions of CSA cukes we have. 🙂  I found I had to be pretty generous with the salt to brighten it up.

Salsa Verde

Doesn’t get easier than this and salsa verde is my favorite.  I’m kicking myself for not growing tomatillos this year, but maybe next when we have more space in the garden.  I used this for shredded chicken in salsa verde, but it’s great with anything.

Onion Dip

As much as I love onion dip, I’ve never tried to make it before.  I was pleasantly surprised by how easy it was – caramelize some onions and blend.  This was delicious – I could have eaten the whole batch myself.  This was from an Ina Garten recipe, and my only alteration was to add a pinch of smoked paprika, which I think was a good addition.  Another of our Memorial Day picnic recipes.

Deviled Eggs

Deviled eggs are one of my favorite appetizers, especially for picnics.  Shawn makes some killer deviled eggs, and it’s possible I helped myself to way more than my share.  They’re also great for lunch and snacks.  You may want to double this for a crowd.
