Smoked Sausage Stew

I stumbled on this recipe in my constant search for interesting slow cooker ideas, and although it is a cassloulet type dish, I thought the base idea might be something fun, and easily modified. I love beans, particularly in soups and stews, but unfortunately they’ve been off the table for a few years now. For those interested, this would work well with low FODMAP and most AIP diets (besides the diced tomatoes). We particularly enjoyed this one the next day!

Poached Fish in Spicy Tomato Broth

So this is pretty much awesome.  It’s a Cooking Light recipe that was my first time cooking fish years and years ago, and I’m just now getting around to posting it and remembering how great it was.  Great weeknight meal, fast, tasty, and any veggies go well with it.  We had this with roasted green beans and mashed cauliflower.  This would be great with any firm white fish.

Breaded Pork Chop Cutlets

I am generally not a fan of breaded anything, but these were awesome and very simple.  I brined the pork chops for a couple of hours before cooking, which really does make all the difference IMO, no matter what the cooking method (I’ve started doing it with chicken breast too, and get great results).  This is from this month’s Cooking Light, and we had it with mashed potatoes and brussels sprouts – we both loved it.

Slow Cooker Beef and Broccoli

Always on the lookout for new crockpot recipes to try, and this one was very good.  Easy and a good riff on the takeout classic.  I might add a hair more garlic and some Sriracha next time, but just being picky.  You could serve this over rice or noodles, but we actually just had it on its own and enjoyed it that way.

Queso Dip

So I feel like I may be stretching it a bit if I call this a recipe.  But it is like crack dip and Velveeta for the win, of course!  This was great for a crowd, and you can really adapt it any way you like.  I made this for a fun girls’ night at the barn and we enjoyed it!

Andouille Sausage and Black Bean Chili

I have had a chorizo/black bean chili recipe from Cooking Cooking light saved forever.  But of course when I go to actually make it, the store is out of chorizo.  Andouille seemed like it would also go well, and actually it was pretty good!  This was a mish-mash of two similar Cooking Light recipes in the end, and I altered it for the crock pot.  It has made a great freezer meal, and the only thing I would change is next time, I would not add the sausage until the last hour or so of cooking – just to heat it through.  It lost some flavor in the crock pot all day.

Spicy Chicken Kabobs

Missy sent me this really excellent chicken marinade, and we had to give it a try.  It’s Asian-y and delicious.  We made a few changes, cut back on the spice a bit because we’re not huge on heat, and added a couple of cloves of garlic.  It was great and we’ll definitely do it again – the leftovers for lunch will be awesome.  We had it with some bok choy as a side.

Slow Cooker White Beans and Kielbasa Stew

I was looking for some kind of new slow cooker recipes, since I tend to repeat the ones we have quite often.  I found this on Real Simple, and though it’s more hearty fall/winter than an 80-degree day in May kind of meal, it was still good, and it was easy – both important on late barn nights.  Definitely worth making again, though I might wait until it’s a bit chilly again. 😉

Chicken and Bok Choy

Stir fry is not something I usually bother with a recipe to prepare, as it’s a great clean out the fridge opportunity.  But I saw this on Rasa Malaysia and wanted to give the idea of it a try, simply because we love bok choy.  I almost never use chicken in my stir fry, because I suck at cooking it any way but braised/baked/handed to Shawn to grill.  Otherwise it’s gummy, tough, and dry, yum yum!   But this was actually a great technique and I will do it again.  The sauce was light, and I found myself thinking that this would be a lovely summertime meal with additions from the garden to accompany the bok choy.  We bulked this up with some shirataki noodles instead of rice.

Italian-style Chicken Bake

It’s hard to argue with an easy weeknight chicken dish, especially one that is super cheesy, too!  I saw this on Pinterest (having good luck with ideas there lately) and modified it more to our seasoning tastes.  It was good!  I’m not the best with chicken breast, but this was not even a little bit dry, and this is a very versatile recipe – add any veggies you like.  We threw in spinach.  The only change I’d make is to add more tomatoes next time – maybe a second can.  We had this with some steamed broccoli on the side.  Yes, there IS chicken somewhere under that cheesy goodness!
