Mustard-Peppercorn Rib Roast

We decided on a standing rib roast for Christmas dinner this year, and I don’t have much experience with them – but this was a winner.  Nice cut, easy to do, and found a rub recipe that we really loved!  This came from Chow and we were thrilled with it – only change is that I only put the rub on the outside – didn’t cut into the roast.  We served this with garlic blue cheese mashed potatoes and green beans…I think this goes down as my favorite holiday dinner I have ever done.

Sausage and Vegetable Roast

Possibly it’s a stretch to call this a recipe, but we loved this – just a tossed-together thing that would be good to clean out the fridge.  Would work with most vegetables, but I think the sweet potato and sausage base made it.  Hot Italian might be really delish.

Lettuce Wrap Turkey Tacos

This was a great, low carb idea I got from Skinnytaste.  I have home-mixed taco seasoning, and that was perfect to spice up the a ground turkey a bit.  We really loved this, and since neither of us is a huge fan of taco shells, we actually preferred the lettuce!  Pretty quick and easy for a weeknight meal, too.  Top with any of your favorites – a little reduced fat cheese and sour cream helped temper the heat a bit.   I serve this with Mexican-style black beans.

Fish Tacos

I had the pleasure of visiting San Diego for a convention last June, and one of the first things I sought out was a fish taco from what I was told was a “must have” source.  I love them.  Delicious and filling and awesomeness all in one.  And very easily done low cal/WW-friendly.  We really enjoyed this version, which I got from Chow, and it had a delicious cabbage slaw.  I got the idea to try them for low cal from my friend Missy, and it was definitely a good call!  I made almost no changes to this recipe.
