Indonesian Grilled Swordfish
Great fish recipe from my friend Missy, which you can see at her site, Recipes by Missy. This would probably work pretty well with any sturdy fish steak. I served this with saffron rice and garlic green beans.
Rosemary Pork Tenderloin
Nice dinner that is good for a busy weeknight or for company. I usually serve this with some kind of rice side dish and some roasted veggies.
Swedish Meatballs
Delicious recipe, though time consuming. Worth it though, especially for the leftovers that make for easy lunches.
Spring Vegetable Pad Thai
This is great with rice noodles or shirataki noodles if you’re watching your calories.
Winter Squash And Sausage Ragu
One of my favorite dishes from Mark Bittman, via my friend Becky. Fantastic way to use up some winter squash, and it’s good with any variety. I’ve also tried it with a few different kinds of sausages, which have all been great (vegetarian also works). It’s very adaptable and the leftovers are always nice to have for lunch!
Classic Tomato Sauce
Easy, classic tomato sauce that’s great over pasta, chicken or eggplant Parmesan, or just about anything else you can dream up.
Nutty Brown Rice
Great way to jazz up rice as a side dish. I really love this with pork or chicken.
- Short grain brown rice
- 3 tablespoons Unsalted Butter
- 1 1⁄2 cups Mixed Nuts – walnuts and almonds go especially well
- 1/2 teaspoon nutmeg
- 1 cup frozen green peas
Cook rice according to directions.
Heat butter in a large heavy skillet over medium heat until foam subsides. Add nuts and cook, stirring, until butter and nuts are golden brown, about 4 minutes.
Add rice, peas and nutmeg to skillet and toss to coat, until peas are cooked through.
Corn Bread
Easy, light, fluffy and a little sweet. Great with salads or a summer dinner.
