So I’ve never been much for frozen fish. I don’t know why, because I love fish and it’s far more affordable (and easy to deal with when you can cook it later in the week), but it’s just always been a little disappointing. However, we recently discovered Trader Joe’s frozen fish, and it’s really quite good! These tuna steaks were our second try, and we were happy. I marinated the tuna for about 45 minutes because I ran out of time, but I imagine it would be great if it went longer. We served this with lightened spicy Asian noodles and roasted brussel sprouts and cauliflower.

Hoppin’ John
There have been very few New Years Days in my adult life that I have not eaten black-eyed peas in some form. I’m not a superstitious person, but I happen to love black-eyed peas, so why tempt fate? Can always use a little extra luck to start the year, right? This is the rendition of Hoppin’ John I’ve been using over the years. It’s been a lot of recipes mish-mashed into one. This year I admit I lightened it up a little bit with less oil, turkey bacon instead of regular bacon, etc, but it was still excellent. It may have to make an appearance more than just New Years Day!
Herb and Garlic Roast Lamb
This was our New Year’s Eve dinner, and it was pretty good. I thought it was a great base (original came from Bon Appetit), but first, I undercooked it a bit and it had to go back in. Second, I thought the herb rub was *too* herb-tastic. Next time, I will cut back a bit on the herbs. Recipe is with portions cut back. We used a 2-lb butterflied boneless leg of lamb and served it with herb roasted potatoes and almond green beans.
Chicken Cutlets with Dijon Sauce
So after a year in which my exercise levels dipped dramatically and possibly some holiday over-indulgence, I took the plunge and joined Weight Watchers. Gotta lose some lbs! This was the first meal I cooked for which I was actually conscious of points, etc. We thought it was quite good (though the chicken ended up being a little cold due to poor timing on my part), and would definitely make the sauce again. It would go well with fish, too. This was a Cooking Light recipe, and I made it with a side of sauteed peppers and sweet potato fries.
Herb-Crusted Roast Beef
Roast beef is probably my favorite Christmas dinner. We don’t have beef too terribly often, and it’s always so festive! Aside from a kerfluffle involving the meat thermometer counting backwards, it was relatively simple to make, too…and came out perfectly! Definitely a keeper. This is a modified Food Network recipe.
Arctic Char in Parsley and Garlic Sauce
We’re always looking for new ways to cook fish, and incorporate more of it in our meals. We had some frozen Arctic Char hanging out that needed something to do. I based this off a Food Network recipe for Garlic/Rosemary Arctic Char and went from there. We served this with roasted asparagus and roasted herb potatoes.
Tomato Basil Soup
I’m really not a fan of tomato soup. Except I can’t turn this one down. This one is Serious Eats attempt at Nordstrom’s rendition of Tomato Basil soup, and I thought it was pretty darn close. It was a perfect dinner on a chilly evening paired with a good old grilled cheese. I made this recipe as is, with one exception – I substituted light cream for heavy. We didn’t notice the difference.
Naan Pizza
We have delivery Indian, and we like to order it. A lot. Our eyes are always bigger than our stomachs, and we tend to get a lot of naan bread. There’s just nothing as good as fresh, hot naan! The “problem” is that it leaves a lot left over, and I was looking for something new to do with it – out came a naan pizza. I just used what I had on hand in the fridge and it came out well! It makes a great little personal pizza.
Sesame Udon Noodles
This is a great base recipe to use for a side dish. It is very versatile…add as many veggies as you want, or even add some chicken, pork, or tofu and turn it into a main dish. I just used what I had on hand. It also makes plenty, so can easily serve a crowd or make leftovers for lunch. We loved this one.
Ham and Green Pea Pasta
Well, I’d had something more elaborate planned for the first meal in our new house. But then I ran out of time to go to the store because I much preferred riding the horse and unpacking to the grocery store on football Sunday. Cook with what was in the meager post-move fridge it was, and this is what resulted! Last of the Thanksgiving ham, some leftover cream, some cheese…and here we are. We were quite pleased with it!
