Scotch eggs have always been one of my favorites, particularly at the Renaissance Faire, and I don’t know why it never occurred to me to try to make this sooner! They were a great addition to Christmas brunch. Don’t make the same mistake I did and hard boil the eggs – these are baked, so they will be cooking longer, and the texture of the yolk was a bit off because hard boiled became VERY hard boiled. 😉 Consider 8-10 minutes for this.

Spring Rolls
Spring rolls are one of my favorites, packed with veggies and SO much flavor. I stumbled across a photo of a Vietnamese menu, and couldn’t stop thinking about them, so I thought I would give it a go, and they were great. This is actually an excellent way to clean out your fridge from veggies and/or meat, and spring roll wrappers can be found in the regular store. I used ground chicken with cucumber, carrots, green onions, and a handful of leftover herbs for these. Most anything would work. Don’t overstuff them! They do fall apart easily if you do, though the taste is still great.

I’ve had this recipe bookmarked for quite a while, and I finally decided to go ahead and try it for our Thanksgiving gathering this year. It is incredibly easy to make, looks beautiful on the table, and is absolutely delicious! I got the recipe from Delish, and made no changes other than to double the size of the brie wheel and thus the amount of biscuits.

My friend Talia and I went to the winery next to the barn, and of course had to try anything cheese related…which included a feta and red pepper dip. Â It was so good that I had to try to reproduce it! Â It took a few false starts, but it came out well. Â We served this for our Kentucky Derby party.

Hummus
This is one of my favorite homemade hummus recipes – great every time. Â I have used both dry and canned chickpeas and it’s been good either way. Â I also add a sprinkling of sumac when it is done. Â Great with veggies and pita chips.

Layer Dip
A typical six (or seven, if you add meat) layer dip.  The only thing I really did differently was to heat up and season the refried beans so they were a little less…canned. 🙂  And I made the guacamole from scratch.  One of my favorites!  We had this at our New Years Eve party.

Chex Mix
I remember our friend John making chex mix for parties in the past, so when I ran across this Pioneer Woman recipe, I wanted to give it a go. Â It was very good, although I think better the next day.

Spinach and Artichoke Dip
Despite the fact that this is one of my favorite appetizers, I’ve never actually made it myself. Â I found this Pioneer Woman recipe, and thought it would be perfect for our casual New Years Eve party – all appetizer-tastic. Â It was excellent!
Loaded Baked Potato Dip
My favorite thing to bring to parties is always the appetizer (probably because it’s my favorite thing to eat ;)). Â This was a dip I hadn’t tried before that I made for our annual potluck. Â It was really good, the only thing I’d say is that you would need to use thick chips to scoop up this dip! Â Recipe from The Kitchn.

Pizza Cake
So this isn’t really a recipe, but it was a pretty cute dinner project that was a hit with the kids.  You could use homemade pizza crust and sauce, and if it hadn’t been a weeknight dinner, I probably would have (and you could get really original with it that way, too). But it was still pretty good with store bought both.  You will need a springform pan for this.  This might also be a fun appetizer at a small party.
